Ingredients

Units Scale
  • 1 1/2 medium onions, chopped
  • 3 stalks celery, chopped
  • 2 carrots, chopped
  • 45 cloves of garlic, minced
  • 1 tablespoon olive oil
  • 1 lb ground beef, chicken or turkey
  • 2 tablespoons tomato paste
  • 1/2 to a full package of chili seasoning
  • 1 can black beans, drained
  • 1 can kidney beans, drained
  • 1 can chopped green chiles
  • 32 ounces beef, chicken or vegetable broth
  • 1 bag/box frozen corn (or substitute canned corn)

Instructions

  1. Add olive oil to large pot over medium high heat. Cook onion, carrot, celery & garlic for about 5 minutes.
  2. Add ground beef and cook, stirring well, until meat is no longer pink.
  3. To the pot, add tomato paste, chili spices, beans, green chili and broth. 
  4. Bring mixture to a boil and then turn down the heat and simmer for at least 30 minutes.
  5. 10 minutes before serving add frozen or canned corn.
