Grape salad is the dish that convinces people salad can be dessert and nobody stops you. The Chicken Salad Chick version is a cream cheese and sour cream situation with enough sugar to qualify as a side of frosting. Delicious. Also not something you eat twice in one week without consequences.

Here’s the lightened up version I’ve been making instead, and what’s actually different about it.

The Sugar Is Gone

Not reduced. Gone. The original leans on a real sugar and brown sugar combination to get that sweet, almost cheesecake-like dressing. This version swaps in a monk fruit sugar substitute instead, so you get the sweetness without the blood sugar spike that follows a bowl of what is, let’s be honest, dressed up candy.

If you’ve never used monk fruit sweetener, I really like the Lakanto brand. It measures and works exactly like traditional table sugar.

Some of the Sour Cream Became Greek Yogurt

This one’s a half swap, not a full one. The dressing here splits the base evenly between sour cream and plain Greek yogurt instead of going all in on sour cream like the original does. You still get that tang, but Greek yogurt brings protein to a dish that previously offered none, and it does it without changing the texture enough for anyone to notice unless you tell them.

Half the Cream Cheese

The original recipe is built on full blocks of cream cheese doing most of the heavy lifting for that rich, dense coating on every grape. This version cuts that down to half a block. Less saturated fat, less of that heavy feeling twenty minutes after you’ve eaten more than you meant to, which, if we’re talking about grape salad, is all of us.

Same Grapes, Same Pecans, Same Reason You’ll Make This Again

Nobody’s pretending this is a health food. It’s still a creamy, sweet bowl of fruit you’ll eat with a fork standing at the counter. But dropping the added sugar, cutting the cream cheese in half, and bringing in some Greek yogurt means you can make this for a potluck, a Sunday dinner, or just because, without the sugar crash and heaviness that comes with the original.

Same crowd pleaser. Lighter bill to pay for it afterward.

Description

Grape salad, minus the sugar crash. This lightened up Chicken Salad Chick copycat cuts the cream cheese in half, swaps in monk fruit sweetener, and blends the dressing with Greek yogurt instead of straight sour cream. Same creamy, crave-worthy grape salad, lighter bill to pay for it after.


Ingredients

  • 2 cups washed seedless grapes
  • 4 oz cream cheese (half a standard block), softened
  • 1/4 cup sour cream
  • 1/4 cup plain Greek yogurt
  • 1/4 cup monk fruit sugar substitute – I like Lakanto
  • 1 tablespoon vanilla extract
  • 1/8 cup chopped pecans, for garnish

Instructions

  1. In a mixing bowl, combine the cream cheese, sour cream, Greek yogurt, monk fruit sweetener, and vanilla extract. Beat with a hand mixer until smooth and fully combined.
  2. Stir in the grapes by hand until evenly coated.
  3. Top with chopped pecans just before serving.
  4. Store in the refrigerator until ready to serve.
