The Four Ingredients You’ll Need
A premade graham cracker crust. You can make your own if you prefer, but the ones from the grocery store are more than adequate. Look for one that has minimal ingredients (graham cracker crumbs and butter.) There are gluten-free options as well.
Egg yolks. Save the egg whites for another use.
Sweetened Condensed Milk. You’ll need a 14 ounce can. Any brand will work.
Nellie & Joe’s Key West Lime Juice Look for it in the juice or baking aisle of your local grocery store. You can also order it from Amazon. It contains key west lime juice (from concentrate) from and less than 1/10 of 1% sodium benzoate as a preservative. Once opened you can store the bottle in your refrigerator or freeze the leftover juice in an ice cube tray. The company says that one to two tablespoons of juice is equivalent to one key lime (key limes are small!) Use three tablespoons of juice if you’re substituting for a “regular” lime.
(Optional) I like to top the pie with homemade whipped cream and a little extra lime zest.
Making Key Lime Pie
Now, let’s talk about the star of the show: the filling. The secret behind the vibrant flavor of this key lime pie is key lime juice. Combine three egg yolks with 14 ounces of sweetened condensed milk and 1/2 cup of Nellie & Joe’s key west lime juice.
Mix everything together & pour it into a store bought graham cracker crust. Once the filling is poured into the crust, it’s time to let the oven work its magic. Bake the pie for 15 minutes at 350 degrees. As the pie bakes, the edges will set while the center maintains a gentle jiggle. This is when you know it’s time to take it out and let it cool. The aroma that fills your kitchen during this stage is simply irresistible!
Remove the pie from the oven and let it cool for at least 30 minutes before putting it into the fridge.
The result is a luscious and creamy filling that strikes a balance between sweetness and tanginess, leaving you wanting more with every bite.
To achieve the perfect consistency and allow the flavors to meld, refrigerate the pie for a minimum of two hours, or even better, overnight. Patience is a virtue when it comes to this dessert, but the end result is well worth the wait. The chilled pie will have a velvety texture and a vibrant lime flavor that will transport you to a tropical paradise.
