Ingredients

olive oil
1pound ground chicken or turkey
1 large onion, chopped
3 stalks of celery, chopped
2– 3 carrots, chopped
3 cloves of garlic, minced
2 tablespoons tomato paste
1 can diced tomatoes
1 can beans, drained
1 tablespoon Italian seasoning
4cups chicken or vegetable stock (or chicken bone broth)
10 ounce package of mini ravioli
Parmesan cheese and fresh parsley (optional garnish)
Instructions
In a large stock pot or dutch oven, add a drizzle of olive oil and brown the ground chicken/turkey over medium heat until it is thoroughly cooked and no longer pink.
Add chopped onions, carrots and celery and continue cooking for an additional 5 minutes.
To the same pot, add garlic, tomato paste, diced tomatoes, beans, italian seasoning and stock/broth.
Bring to a boil and then turn down to a simmer for at least 10 – 15 minutes.
Prior to serving, return mixture to a low boil and add the mini ravioli. Cook according to package directions.
Serve soup topped with shaved Parmesan cheese and chopped parsley.
Notes
Leftovers can be stored in the refrigerator for a few days (or frozen). You may need to add additional broth/water because the pasta will soak up the liquid.
