Sugar-Free Pineapple Casserole

Pineapple casserole is a beloved Southern side dish, balancing sweet, salty, and buttery flavors in every bite. It’s the perfect accompaniment to Easter ham, a potluck standout, and the most popular recipe on the Southern Living website. I’ve given this classic a modern twist by swapping out white sugar for monkfruit, keeping all the flavor with none of the added sugar.

Why You’ll Love This Recipe

Easy to Make: A handful of pantry staples come together in minutes.
Perfect for Gatherings: It’s a crowd-pleaser that disappears fast.
No Added Sugar: Monkfruit keeps things sweet without the sugar crash.

Simple Ingredients, Big Flavor

Here’s what you’ll need:

  • Canned Pineapple Chunks in Juice (2 cans, 20 oz. each): Sweet, juicy, and packed with tropical flavor. Fresh pineapple doesn’t work for this recipe — stick with canned for the best results.
  • Monkfruit Sweetener (1/3 cup): A natural, zero-calorie sweetener that mimics sugar.
  • Flour (5 Tbsp.): Thickens the filling to create a luscious, creamy texture.
Cheddar Cheese (1 cup, shredded): Adds a savory, salty contrast to the sweet pineapple.
  • Butter (1/4 cup, melted): Rich and buttery, binding the topping together.
  • Ritz Crackers (1 sleeve, crushed): Crispy, golden, and delightfully buttery.

Tips for the Best Casserole

Drain Well: Excess juice can make the casserole soggy, so drain the pineapple thoroughly.
Use Only Canned Pineapple: Fresh pineapple doesn’t provide the same texture or moisture balance, so stick with the classic canned variety.
Cheese Choices: Swap cheddar for Colby Jack or sharp cheddar for extra zing.

The Perfect Holiday Side Dish

This sugar-free pineapple casserole is a must-have for Easter, Thanksgiving, or any gathering. The sweet pineapple, creamy cheese, and buttery cracker topping create an irresistible combo that feels indulgent without the added sugar. It’s proof that a little tweak can make a classic dish even better — no sugar required.

Try it out, and don’t be surprised if it becomes your most requested recipe. One bite, and you’ll understand why this dish is a Southern icon!

Description

Pineapple casserole is a beloved Southern dish, balancing sweet, salty, and buttery flavors in every bite. I’ve given this classic a modern twist by swapping out white sugar for monkfruit, keeping all the flavor with none of the added sugar.

Ingredients

Scale
  • 2 (20-oz.) cans pineapple chunks in juice, drained (reserve 6 Tbsp. juice)
  • 1/3 cup sugar or sugar substitute (I used monkfruit)

  • 1 cup shredded Cheddar cheese
  • 1/4 cup butter, melted
  • 1 sleeve Ritz crackers, crushed

Instructions

  1. Preheat oven to 350°F.
  2. In a medium size bowl, combine sugar, flour, and reserved pineapple juice. Add pineapple chunks and toss well to combine. Spoon pineapple mixture into 8×8-inch casserole dish, and top with shredded cheese.
  3. Combine crushed Ritz crackers and melted butter. Spread Ritz cracker topping evenly on top of pineapple mixture.
  4. Bake at 350°F for 30 minutes, or until bubbly.
