Ingredients

  • 1/3 cup tahini
  • 1/3 cup honey
  • 1 teaspoon vanilla extract or vanilla paste
  • 1/4 teaspoon salt
  • 1 cup shredded unsweetened coconut
  • 1/2 cup raw unsalted pumpkin seeds (pepitas)
  • 1/2 cup raw unsalted sunflower seeds
  • 1/4 cup chia seeds
  • 1 cup sliced almonds
  • 1/4 cup hemp hearts
  • 1 teaspoon cinnamon

Instructions

  1. Preheat oven to 325 F. Line an 8″ square pan with parchment paper. Spray the parchment paper with cooking spray.
  2. Combine tahini and honey in a small saucepan over medium heat. Cook, stirring well, until combined and warmed (about 2 minutes). Remove from heat. Add vanilla and salt.
  3. In a large bowl, stir together coconut, pepitas, sunflower seeds, chia seeds and hemp hearts. Add the warmed tahini mixture and stir until evenly coated.
  4. Press the mixture into the prepared pan and bake for 30 – 35 minutes until golden.
  5. Using the parchment paper, remove from pan and let the mixture cool completely before cutting into squares.
