Ingredients

  • One 14 ounce can of corn niblets (or the kernels cut from 23 fresh corn cobbs)
  • 12 Jalapeno peppers, finely diced (remove seeds for less spice)
  • 3 green onions, chopped (or substitute chives)
  • 2 cups cherry tomatoes, chopped
  • 1 lime (or substitute lemon) juiced
  • 3 tablespoons olive oil
  • hot sauce to taste
  • 1/2 bunch fresh cilantro, chopped
  • One avocado, chopped
  • salt and pepper
