No-Fuss Strawberry Cobbler – The Only Cobbler Recipe You’ll Ever Need

Share the ♥︎

If you need a dessert that feels nostalgic but fits real life, this easy strawberry cobbler with fresh or frozen fruit is it.

There is something about Strawberry Cobbler that just works. It is cozy and unfussy. It tastes like summer at its peak, even if you are pulling berries straight from your freezer in the middle of winter. And the best part? You can swap the fruit and make it your own without overthinking it.

This version is inspired by a recipe from Kathleen Ashmore of @katcancook, and it has quickly become one of those back-pocket desserts I rely on when I want something homemade without a full production.

Why This Strawberry Cobbler Is So Easy

Let’s start with what makes this Strawberry Cobbler recipe a keeper.

No complicated crust.
No rolling pins.
No fancy techniques.

You stir together a simple batter, pour it into your baking dish, spoon the fruit over the top, and let the oven do the heavy lifting. As it bakes, the batter rises up around the strawberries and creates that golden, tender cobbler topping we all love.

Fresh or Frozen Fruit? Both Work.

Here is where this recipe really shines.

You can make this cobbler with:

  • Fresh strawberries at peak season
  • Frozen strawberries straight from the bag
  • Peaches
  • Blueberries
  • Blackberries
  • Mixed berries
  • Even apples or cherries

If you are using frozen fruit, there is no need to thaw it first. Just toss it with your sweetener and add it right on top of the batter. The oven takes care of the rest.

That flexibility means this is not just a strawberry cobbler recipe. It is a year-round cobbler formula. Keep the method. Change the fruit. Move on with your life.

A Healthier Twist with Monkfruit

Traditional Strawberry Cobbler recipes rely heavily on white sugar. I made a simple swap and used monkfruit sweetener instead.

Monkfruit gives you that same sweetness without the blood sugar spike of regular sugar. If you are watching your sugar intake, trying to cut back, or just want a lighter dessert option, this is an easy win.

You still get:

  • Juicy, jammy strawberries
  • A golden, tender topping
  • That classic cobbler flavor

But with less sugar and no sacrifice in taste.

If monkfruit is not your thing, you can absolutely use regular sugar, coconut sugar, or your sweetener of choice. This recipe is forgiving.

What Makes a Great Strawberry Cobbler

A good cobbler is about contrast.

You want the fruit to be soft and bubbling, almost saucy. The topping should be lightly crisp on the outside and tender inside. That way it is sweet but not cloying.

This Strawberry Cobbler checks all those boxes.

The strawberries break down just enough to create that syrupy base. The batter puffs up around them and browns beautifully. Serve it warm and you have that perfect mix of juicy fruit and soft cake-like topping in every bite.

Add a scoop of vanilla ice cream or a dollop of whipped cream if you want to lean fully into the comfort factor.

When to Serve Strawberry Cobbler

This is one of those desserts that fits everywhere:

  • Summer barbecues
  • Holiday gatherings
  • Casual weeknight dinners
  • Brunch with friends
  • A random Tuesday when you need something sweet

It travels well, reheats beautifully and tastes just as good the next day.

If you are hosting and want a dessert that feels homemade but does not stress you out, this is your answer. And if you are cooking for one or two, leftovers are not exactly a problem.

The Bottom Line

This easy Strawberry Cobbler recipe is simple, flexible, and quietly brilliant. Inspired by Kathleen Ashmore’s original version, it keeps all the comfort of a classic cobbler while allowing for healthier swaps like monkfruit sweetener.

Ingredients

Units Scale
  • 3 tablespoons butter
  • 1 cup gluten-free or all purpose flour
  • 1/4 cup oat flour
  • 1/2 cup plus 2 tablespoons sugar or monkfruit substitute
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup unsweetened plain almond milk
  • 1/2 teaspoon vanilla extract or vanilla paste
  • 4 cups fruit (fresh or defrosted frozen), diced
  • whipped cream or ice cream for serving

Instructions

  1. Preheat oven to 375F.
  2. Put butter in an 8″ baking dish and put the dish in the oven until the better is melted. Swirl the butter in the pan until the bottom is fully covered.
  3. In a medium bowl combine the all-purpose flour, oat flour, sugar or monkfruit, baking powder and salt. Whisk to combine.
  4. Add almond milk and vanilla and whisk again until smooth.
  5. Pour the batter into the prepared baking dish and do not stir. The butter will be separated but that is ok.
  6. Add the strawberries (or your chosen fruit) on top of the batter and sprinkle with the remaining 2 tablespoons of sugar.
  7. Bake for 45 – 50 minutes until the batter is set and golden on top. It may look a little wet but it will firm up as it cools.
  8. When ready to serve, top the cobbler with whipped cream or ice cream.
