I got this recipe from my friend Dawn. We’ve known each other for over 40 years (after meeting in 1982 when we spent a year traveling the world together as part of the musical group Up With People. Dawn is a terrific cook and she makes and sells the most wonderful caramels.

Ingredients

Units Scale
  • 2 pounds sharp cheddar cheese, grated
  • 1 cup diced sweet (Vidalia) onion, finely chopped
  • 1 clove of garlic, minced
  • 1 red or green Jalapeno pepper, seeds and stems removed, finely chopped
  • 1 cup good quality mayonnaise

Instructions

Combine all ingredients together and mix well. You may need to adjust the amount of mayonnaise to get the desired consistency. Let sit for at least 30 minutes before serving so the flavors meld. 

Notes

  • For a spicier version, use two Jalapeno peppers.
  • Refrigerate leftovers and use them within a week.
