This soul-soothing creation is not just a meal; it’s a symphony of Italian comfort in a bowl.


Ingredients

  • 1 pound Italian sausage (I used a mix of sweet and hot)
  • 3 cloves garlic, minced
  • 1 large onion, chopped
  • 4 carrots, peeled, split, and cut in 1-inch chunks
  • 3 zucchini, quartered and cut in 1-inch chunks
  • 1 bunch kale, stems removed, chopped
  • 1 18ounce can chopped tomatoes
  • 1 18ounce jar crushed tomatoes
  • 6 cups beef/chicken stock or bone broth
  • 2 tablespoons Italian seasoning blend
  • 1 10ounce package fresh tortellini
  • (optional) parmesan rind
  • (optional) chopped fresh parsley for garnish
  • (optional) grated fresh parmesan cheese for garnish

Instructions

  1. Remove sausage from casing (if required).
  2. In a large dutch oven or soup pot, add olive oil and brown sausage for 2 – 3 minutes. Add chopped onion and garlic and continue cooking until meat is thoroughly cooked and no pink remains.
  3. Add tomatoes, broth, carrots, parmesan rind and Italian seasoning. Cover the pot and simmer over medium heat for at least 30 minutes (longer is even better.)
  4. About 20 minutes before serving, add the zucchini, kale and tortellini. Simmer for an additional 20 minutes until pasta is cooked and zucchini is tender.
  5. Remove parmesan rind. Top the soup with grated parmesan cheese and chopped fresh parsley.
