- 1 pound Italian sausage (I used a mix of sweet and hot)
- 3 cloves garlic, minced
- 1 large onion, chopped
- 4 carrots, peeled, split, and cut in 1-inch chunks
- 3 zucchini, quartered and cut in 1-inch chunks
- 1 bunch kale, stems removed, chopped
- 1 18–ounce can chopped tomatoes
- 1 18–ounce jar crushed tomatoes
- 6 cups beef/chicken stock or bone broth
- 2 tablespoons Italian seasoning blend
- 1 10–ounce package fresh tortellini
- (optional) parmesan rind
- (optional) chopped fresh parsley for garnish
- (optional) grated fresh parmesan cheese for garnish
Instructions
- Remove sausage from casing (if required).
- In a large dutch oven or soup pot, add olive oil and brown sausage for 2 – 3 minutes. Add chopped onion and garlic and continue cooking until meat is thoroughly cooked and no pink remains.
- Add tomatoes, broth, carrots, parmesan rind and Italian seasoning. Cover the pot and simmer over medium heat for at least 30 minutes (longer is even better.)
- About 20 minutes before serving, add the zucchini, kale and tortellini. Simmer for an additional 20 minutes until pasta is cooked and zucchini is tender.
- Remove parmesan rind. Top the soup with grated parmesan cheese and chopped fresh parsley.
