Description

Homemade mayonnaise is so easy to make that you’ll wonder why you ever purchased store bought mayo. It’s delicious, versatile and takes less than 5 minutes to make. Plus it’s Paleo, Whole30, keto, sugar-free & vegetarian.


Ingredients

  • 1 large egg, room temperature
  • 1 teaspoon lemon juice
  • 1/2 teaspoon Dijon mustard
  • 1 1/4 cups avocado oil or light olive oil
  • Salt and pepper

Instructions

  1. Place egg, lemon juice and mustard in a food processor, blender or immersion blender.
  2. Add olive/avocado oil with the machine running, until the mayo thickens. Do not over mix.
  3. Taste and add salt and pepper.
  4. Store the mayo in the refrigerator for up to two weeks. It will stay fresh until the date that your egg expires.
