Description

This one-pot spicy pork and broccolini ramen soup recipe is loaded with flavor and ready in 30 minutes.


Ingredients

Units Scale
  • 1 tablespoon olive oil
  • 1 pound ground pork (see notes for substitutions)
  • 810 ounces chopped mushrooms
  • 3 cloves garlic
  • 1 heaping tablespoon fresh grated ginger
  • 1 teaspoon Sichuan peppercorns, crushed or ground
  • 1/2 teaspoon red pepper flakes
  • 6 cups chicken broth (see notes for substitutions)
  • 1 bunch broccolini (see notes for substitutions)
  • 1 bunch green onions, chopped (separate the white bulbs from the green stems)
  • 2 packages ramen noodles

Instructions

  1. In a large heavy pot, add olive oil and ground pork. Season with salt, pepper, Sichuan peppercorns and red pepper flakes (if desired). Cook for 6 – 8 minutes.
  2. Add chopped mushrooms and cook for an additional 2-3 minutes. Mushrooms should be lightly browned and pork should be fully cooked (no longer pink.)
  3. Add garlic and ginger.
  4. Add broccolini or greens of your choosing (see note for substitutions).
  5. Add 6 cups of chicken stock. Cover and simmer for 10 minutes.
  6. Add ramen noodles and simmer for an additional 4 minutes.
  7. Serve and top with green onions.
