- 1 1/2 medium onions, chopped
- 3 stalks celery, chopped
- 2 carrots, chopped
- 4 – 5 cloves of garlic, minced
- 1 tablespoon olive oil
- 1 lb ground beef, chicken or turkey
- 2 tablespoons tomato paste
- 1/2 to a full package of chili seasoning
- 1 can black beans, drained
- 1 can kidney beans, drained
- 1 can chopped green chiles
- 32 ounces beef, chicken or vegetable broth
- 1 bag/box frozen corn (or substitute canned corn)
Instructions
- Add olive oil to large pot over medium high heat. Cook onion, carrot, celery & garlic for about 5 minutes.
- Add ground beef and cook, stirring well, until meat is no longer pink.
- To the pot, add tomato paste, chili spices, beans, green chili and broth.
- Bring mixture to a boil and then turn down the heat and simmer for at least 30 minutes.
- 10 minutes before serving add frozen or canned corn.
