Traditional cacio e pepe is an Italian staple, but have you ever tried it with zoodles (aka zucchini noodles)? This No Cook Zoodle Cacio e Pepe is light, packed with flavor, and you only need a four ingredients: zucchini, parmesan cheese, olive oil and salt/pepper. It literally couldn’t be any easier, especially in the middle of summer when you don’t want to turn on the stove and your garden is overflowing with zucchini.
Serve Zoodle Cacio e Pepe as a main course, a side dish, or even as a salad. And, of course, you can always add additional toppings to fancy it up. Roasted tomatoes and basil would be divine. So would sauteed garlicy shrimp, chicken or salmon.
This recipe is vegetarian, sugar-free, gluten-free, and keto. If you omit the cheese, you can make a vegan, paleo or Whole30 version. And you can make it in about 10 minutes.
