These No-Bake Peanut Butter Chocolate Oat Cups are a testament to the idea that enjoying a sweet treat doesn’t have to come at the cost of your health. With wholesome ingredients and a little creativity, you can satisfy your cravings without added sugars or processed junk. Whip up a batch of these beauties and relish in the pleasure of real, nourishing indulgence.


Ingredients

For the cups:

  • 1 1/2 cups old fashioned oats
  • 1 cup peanut butter
  • 1/2 cup chopped nuts
  • 1 cup Rice Chex cereal
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract

For the Topping:

  • 1 cup dark chocolate chips
  • 1 tablespoon coconut oil
  • Flaky salt

Instructions

  1. In a large mixing bowl, mix together oats, nuts, and cereal
  2. Add peanut butter and maple syrup and stir to combine
  3. Divide mixture evenly into 12 muffin cups and press down so that it is compacted.
  4. Using a double boiler or a microwave, heat dark chocolate chips and coconut oil. Stir to combine.
  5. Spoon the dark chocolate over the oat mixture.
  6. Top with flaky sea salt if desired.
  7. Put muffin pan in the refrigerator for at least 30 minutes until the cups are solid.

Notes

  1. I used walnuts but you can substitute whatever nuts you desire (almonds, pecans, pistachios, etc.)
  2. For nut-free version, substitute sunflower butter for peanut butter and omit the chopped nuts.
  3. I made this with Rice Chex but you could substitute a different cereal
