For the cups:
- 1 1/2 cups old fashioned oats
- 1 cup peanut butter
- 1/2 cup chopped nuts
- 1 cup Rice Chex cereal
- 1/2 cup maple syrup
- 1 teaspoon vanilla extract
For the Topping:
- 1 cup dark chocolate chips
- 1 tablespoon coconut oil
- Flaky salt
Instructions
- In a large mixing bowl, mix together oats, nuts, and cereal
- Add peanut butter and maple syrup and stir to combine
- Divide mixture evenly into 12 muffin cups and press down so that it is compacted.
- Using a double boiler or a microwave, heat dark chocolate chips and coconut oil. Stir to combine.
- Spoon the dark chocolate over the oat mixture.
- Top with flaky sea salt if desired.
- Put muffin pan in the refrigerator for at least 30 minutes until the cups are solid.
Notes
- I used walnuts but you can substitute whatever nuts you desire (almonds, pecans, pistachios, etc.)
- For nut-free version, substitute sunflower butter for peanut butter and omit the chopped nuts.
- I made this with Rice Chex but you could substitute a different cereal
