- One 14 ounce can of corn niblets (or the kernels cut from 2 – 3 fresh corn cobbs)
- 1 – 2 Jalapeno peppers, finely diced (remove seeds for less spice)
- 3 green onions, chopped (or substitute chives)
- 2 cups cherry tomatoes, chopped
- 1 lime (or substitute lemon) juiced
- 3 tablespoons olive oil
- hot sauce to taste
- 1/2 bunch fresh cilantro, chopped
- One avocado, chopped
- salt and pepper
Instructions
- Mix all ingredients in a bowl and let it sit at room temperature for 15 minutes before serving so the flavors can marry.
