Use Raw Or Cooked Chicken

The beauty of this recipe lies in its adaptability. You can opt for boneless skiness chicken breast or thighs for a meaty, savory bite. I’ve made it with raw chicken and also with pre-cooked leftover chicken. It’s a great way to use up leftover chicken.

Make It Vegetarian

Or you can leave out the chicken altogether to create a vegetarian-friendly version that celebrates the creamy, hearty paneer and chickpeas. The combination of chickpeas and paneer delivers protein without relying solely on the chicken, making this dish an excellent option for vegetarians or those looking to cut back on meat.

Control the Spice Level

Curry powders come with different amount of heat. A basic curry powder from the grocery store will be quite mild. If you want more spice look for curries labeled as spicy or Vadouvan. Or you can add a dash of cayenne pepper to a mild curry to kick it up.

A One-Pan, High-Protein, Complete Meal

This chicken curry casserole is a complete meal in one dish, offering a balanced blend of protein, fiber, and leafy greens. The creamy curry tomato sauce binds everything together with its smooth, velvety texture, while the aromatic spices infuse each bite with warmth and depth.

How To Make Chicken Curry Casserole

Preparation of the casserole is straightforward, making it a perfect choice for busy weeknights or when you want to impress guests with a crowd-pleasing meal. You simply put all of the ingredients in an oven-safe dish, cover it, and let it cook 25 minutes. (You can shorten the cooking time to 15 minutes if you’re using pre-cooked chicken.)

Serving Suggestions

When it comes to serving, this chicken curry casserole pairs perfectly with a side of steamed rice, fluffy naan, or pita bread to soak up the rich curry sauce. I lie to garnish it with a spoonful of labneh or greek yogurt and a sprinkle of fresh cilantro. It’s a satisfying meal that will leave everyone at the table wanting more.

This recipe can be easily scaled up or down depending on your needs, making it perfect for meal prep or family dinners. Once you’ve tried this chicken curry casserole, it’s sure to become a favorite in your repertoire.
