I love coffee cake. What I don’t love is the knife, the plate, and the internal negotiation over whether a second sliver counts as a second piece. Apple coffee cake muffins solve all three problems. Same buttery cinnamon crumb, same tender cake, already portioned into something you can eat standing at the counter while you check the weather.
These are soft, moist apple cinnamon muffins loaded with diced apple and buried under a brown sugar crumb topping so thick the muffin underneath starts to feel like a supporting player. That’s on purpose. The topping is the point.

Wait, Is There Coffee in Coffee Cake?
No. Somebody asks every time, so let’s settle it. Coffee cake got its name because it was meant to be eaten with coffee, not because it contains any. The tradition goes back to European bakers who served sweet, crumb-topped cakes alongside an afternoon cup. So pour yourself one. That’s the only coffee this recipe requires.
The Best Apples for Apple Coffee Cake Muffins
You want an apple that holds its shape in the oven and brings some flavor to the party. Granny Smith gives you tartness that cuts through all that brown sugar. Honeycrisp is sweeter and stays crisp-tender. Mixing the two is my favorite move. Skip Red Delicious, which bakes up mealy and tastes like a cardboard box that once saw an apple.
Dice the apples small. Big chunks look great in photos but leave you with raw, crunchy pockets and a muffin that falls apart when you peel back the liner. Small pieces bake through evenly and put apple in every bite.
Here’s the dirty secret of streusel muffins: half the topping usually ends up on the pan. A few things help.
Mix the topping until it looks like wet sand. Too dry and it rolls right off. Press it gently onto the batter so it actually sticks, instead of sprinkling it like you’re salting fries. Use tulip-style or extra-large liners, which give the crumb a wall to lean on. And don’t overfill the cups, because batter that spills over the edge takes the topping down with it.
Why Sour Cream Makes These So Moist
A scoop of sour cream or Greek yogurt in the batter is what keeps these tender for days instead of dry by tomorrow morning. It also adds a little tang that balances the sweet apples and cinnamon sugar. If you’ve ever wondered why bakery muffins stay soft while yours turn into hockey pucks, fat and acidity are a big part of the answer.
Make Ahead and Storage Tips
These are a gift to anyone hosting brunch, book club, or houseguests who wake up hungry and early. Bake them a day ahead, cool completely, and store them in an airtight container at room temperature for up to two days. For longer, freeze them in a zip-top bag for up to three months. Ten seconds in the microwave brings back that fresh-baked smell, which is half the reason to make them in the first place.
Ready to Bake?
If you’ve been looking for an easy apple muffin recipe that tastes like you tried harder than you did, this is it. Grab your apples, preheat the oven, and make the topping first so you can’t talk yourself out of it. The full recipe is below.
Moist apple coffee cake muffins with warm cinnamon and a streusel topping worth the extra napkin. Make them ahead, freeze them, and look like you tried harder than you did.
Ingredients
UnitsScale
1cup butter, melted
1cup granulated sugar (or monkfruit substitute)
1/2cup apple sauce
1/2 sour cream or greek yogurt
2 large eggs
1 1/2cups all-purpose flour of choice
2 teaspoons ground cinnamon
1/4 teaspoon baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
1 1/2cups peeled & diced (1/8” cubes or finer) apples (approximately 2 medium-sized apples), 1/2 cup reserved for muffin topping
(optional) 2 tablespoons infused sugar
TOPPING
1/4cup melted butter
1/4cup packed brown sugar or monkfruit substitute
3 tablespoons infused sugar
1/2cup diced apples (saved from before)
1/2cup all-purpose flour of choice
Instructions
Preheat your oven to 350ºF.
In a large mixing bowl, whisk together the butter, sugar, apple sauce, sour cream, and eggs, until combined.
In a separate bowl, mix together the dry ingredients, then add to the wet ingredients and stir to fully combine, but don’t over-mix.
Fold in the chopped apples with Infused Sugar of choice, then add 1 cup of the cubed apples and mix to disperse evenly. (Reserve the remaining ½ cup of apples for the topping.) Set the mixture aside.
In a small bowl, combine the topping ingredients, combining with your hands until it becomes the texture of wet sand.
Scoop the batter evenly into a parchment muffin cup lined muffin tin. Spoon crumble topping on each, gently pressing down so it sticks.
Bake for 22-24 minutes or until a toothpick inserted into the center comes clean.
