In the age of sustainability and healthy living, many of us strongly desire to have homegrown produce at our disposal year-round. However, if you reside in a smaller home, outdoor gardening may not be an option. The good news is that indoor fruit and vegetable gardening is completely possible and fun! I’ve been using (and loving) my Lettuce Grow Farmstand for a couple of years now. Whether you are just getting started or are an avid horticulturist, consider giving my favorite delicious edible plants to grow indoors a try.
Not surprisingly my favorite plants to grow in my Lettuce Grow Farmstand are lettuce and other greens (kale, arugula, kotsoi). I love being able to pick fresh greens to toss into a salad, a smoothie or a recipe. And if you trim the lettuce leaves the plants will often grow back for a second round.
Kale, spinach, and microgreens all sprout from the comfort of my home. They each thrive in different conditions, so if you choose to grow these superfoods, read the instructions on the seed packet to ensure you give your plants the best chance. By planting these indoors, you can nourish your body and give your home a splash of vibrant green.
To grow herbs at home, keep them in separate pots with bright, indirect sunlight. When seed shopping, pick out your personal favorite flavors to cook with, as they will be the perfect addition to your kitchen. Some of my favorite herbs to plant include:
A popular choice for indoor gardeners like me, carrots are also fairly easy to grow indoors. Grab a deep pot filled with planter soil and scatter carrot seeds. If you keep the soil moist and the pot in a windowsill, your carrots will sprout within 14-17 days. Wait around 60-80 days before harvesting.
While many people may not consider mushrooms to be plants, they come with tons of health benefits and add a nice touch to any home-cooked meal. I have found that the most effective way to grow mushrooms is to purchase a kit. Giving your mushrooms the ideal growth conditions is vital, so I carefully consider where to place my grow kit according to my home layout and lighting conditions at the time.
We live in Denver, Colorado it’s been known to snow well into May and our summers are very hot and dry. Because our growing season is short, and lot of veggies (like tomatoes) need warm nights in order to thrive, it’s tough to garden here. We have two outdoor raised beds in our yard and every year we spend our summers trying to grow vegetables and herbs with varying results. What we’ve learned is that the Farmstand is a lot more stable and consistent.
If you live in an area where the nights are cool, you can buy a small heater that turns on at night and keeps the water from freezing.
In the fall, we move our Farmstand indoors and use the grow lights. They’re on a timer so they come on in the evening and ensure that we can continue to grow fresh produce all winter long. Our friends are so jealous when they come for dinner during the winter and we can serve them a tasty salad using fresh lettuce that we just picked and a delicious dinner topped with fresh herbs. It’s a great party trick!
