10-Minute Black Bean Soup is a healthy, lip-smacking recipe made with just four ingredients in ten minutes. Quick and easy!

- 2 15–ounce cans of low-sodium black beans, drained and rinsed
- 2 cups vegetable or chicken broth
- 1 cup chunky salsa
- 1 teaspoon cumin
Toppings
- 1/4 cup sour cream
- 1/4 cup shredded cheddar cheese
- 2 tablespoons green onions, or fresh cilantro
- (optional) sour cream for topping
Instructions
- Set aside one cup of black beans.
- Add remaining black beans, broth, salsa and cumin to a blender or food processor and process until smooth.
- Add the pureed bean mixture and the whole black beans to a saucepan and heat over medium for about 10 minutes.
- To serve, top with sour cream, cheese, and green onion or cilantro.
Notes
- Use vegetable stock to keep the soup vegetarian/vegan.
