Don’t be afraid to make artichokes at home. It’s easy to make healthy, delicious artichokes in an Instant Pot or on the stovetop.

- 3–4 large artichokes
- 1 cup cold water

INSTANT POT INSTRUCTIONS
- Trim stem and top leaves of artichoke.
- Place artichokes in a steamer basket or on the rack in your Instant Pot.
- Add the cold water and lock the lid.
- Place Instant Pot on the manual setting (high pressure) for 12 minutes and make sure vent seal is sealed.
- After 10 minutes, quick release the pressure. Remove artichokes and test them by pulling off and tasting one of the leaves. If it isn’t cooked enough, return to the Instant Pot and cook for another 2-3 minutes.
STOVETOP DIRECTIONS
- Trim stem and top leaves of artichoke.
- Place artichokes in a steamer basket of a large lidded pot. Add 1-2 cups of water to the pot.
- Bring water to a boil and steam the artichokes for 35 – 40 minutes.
- Remove artichokes and test them by pulling off and tasting one of the leaves. If it isn’t cooked enough, return to the steamer and cook for another 2-3 minutes.
