Whipped Ricotta Bruschetta features crispy toast topped with velvety whipped ricotta and a vibrant medley of tomatoes and peaches. - 1 baguette (sourdough or plain)
- 8 ounces ricotta cheese
- 2 tablespoons honey or hot honey
- 3 – 4 tablespoons olive oil (divided)
- 1 – 2 heirloom or cherry tomatoes
- 1 – 2 peaches
- (optional) fresh basil for garnish
- (optional) balsamic glaze
Instructions
- In a food processor or mixer (or using an immersion blender) mix ricotta cheese, honey and olive oil until the mixture becomes smooth and creamy. Season with salt and pepper.
- Dice peaches and tomatoes and toss in a bowl with 1 teaspoon olive oil, salt and pepper.
- Slice baguette into 1/2 inch pieces. Drizzle lightly with olive oil and place in a 350 degree oven for 5 – 7 minutes until lightly browned.
- Spread the ricotta mixture on each toasted bread slice and then top with the tomato/peach mixture.
- If desired, drizzle with balsamic glaze and fresh basil.
