Ingredients

1 baguette (sourdough or plain)
8ounces ricotta cheese
2 tablespoons honey or hot honey
3 – 4 tablespoons olive oil (divided)
1 – 2 heirloom or cherry tomatoes
1 – 2 peaches
(optional) fresh basil for garnish
(optional) balsamic glaze
Instructions
In a food processor or mixer (or using an immersion blender) mix ricotta cheese, honey and olive oil until the mixture becomes smooth and creamy. Season with salt and pepper.
Dice peaches and tomatoes and toss in a bowl with 1 teaspoon olive oil, salt and pepper.
Slice baguette into 1/2 inch pieces. Drizzle lightly with olive oil and place in a 350 degree oven for 5 – 7 minutes until lightly browned.
Spread the ricotta mixture on each toasted bread slice and then top with the tomato/peach mixture.
If desired, drizzle with balsamic glaze and fresh basil.
