Stay cool with this refreshing watermelon cucumber salad! Made with berries, lime, feta, and Tajin, it’s sweet, salty, tangy, and a little spicy — plus no cooking required. Ready in 15 minutes, perfect for summer BBQs, picnics, or easy weeknight dinners. Healthy, hydrating, and 100% delicious. 


Ingredients

  • 1/3 cup walnuts, pistachio nutmeats, almonds or your nut of choice
  • 5 cups bite-sized watermelon chunks
  • 2 Persian or mini cucumbers, sliced into thin rounds
  • 6 ounces blueberries or blackberries
  • 4 ounces feta cheese, crumbled
  • 1/4 cup freshly squeezed lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon chili lime seasoning, such as tajín
  • salt and pepper to taste
  • (optional) fresh mint garnish

Instructions

  1. In a small skillet over medium-low heat, toast the nuts for about 2 minutes, stirring to avoid burning. Set aside to cool.
  2. In a large bowl, combine the watermelon and cucumbers. Add the berries and cooled nuts. Sprinkle in the feta, lime juice, olive oil, chili lime seasoning, and a pinch of salt.
  3. Toss gently and garnish with fresh mint (if desired).
