Description
If you love eating at Chipotle, try these two-ingredient sofritas, a copycat recipe that combines firm tofu with taco seasoning. Oven, stovetop and air fryer directions. It’s easy meatless & delicious.
Ingredients
- one block of extra-firm tofu
- one packet of prepared taco seasoning mix (I like the Siete and Trader Joes brands)
- neutral oil (avocado or olive oil)
Instructions
- Open the tofu package and drain any liquid. Place it in an airtight container or wrap it in plastic wrap and freeze it fully (at least 4 hours). I usually keep a block in my freezer so I’m ready to go.
- Let the tofu thaw in a strainer in the sink. Once it’s fully thawed, crumble it with your hands and press out any remaining liquid.
STOVETOP METHOD: Add a drizzle of oil to a skillet. Add the tofu and sprinkle with the taco seasoning. I used about half of the package (3 – 4 tablespoons). Stir well and continue to cook until the tofu mixture starts to brown and get crispy (5 – 10 minutes).
AIR FRYER: Line your air fryer basket with parchment paper. Preheat air fryer to 350F. Toss the tofu with the oil and taco seasoning. Arrange in a single layer and air fry until crispy (about 20 – 30 minutes, stirring occasionally.
OVEN: Line a cookie sheet with parchment paper. Preheat air fryer to 350F. Toss the tofu with the oil and taco seasoning. Bake 25 – 300 minutes, stirring occasionally.
