Description

If you love eating at Chipotle, try these two-ingredient sofritas, a copycat recipe that combines firm tofu with taco seasoning. Oven, stovetop and air fryer directions. It’s easy meatless & delicious.


Ingredients

Scale
  • one block of extra-firm tofu
  • one packet of prepared taco seasoning mix (I like the Siete and Trader Joes brands)
  • neutral oil (avocado or olive oil)

Instructions

  1. Open the tofu package and drain any liquid. Place it in an airtight container or wrap it in plastic wrap and freeze it fully (at least 4 hours). I usually keep a block in my freezer so I’m ready to go.
  2. Let the tofu thaw in a strainer in the sink. Once it’s fully thawed, crumble it with your hands and press out any remaining liquid.

STOVETOP METHOD: Add a drizzle of oil to a skillet. Add the tofu and sprinkle with the taco seasoning. I used about half of the package (3 – 4 tablespoons). Stir well and continue to cook until the tofu mixture starts to brown and get crispy (5 – 10 minutes).

AIR FRYER: Line your air fryer basket with parchment paper. Preheat air fryer to 350F. Toss the tofu with the oil and taco seasoning. Arrange in a single layer and air fry until crispy (about 20 – 30 minutes, stirring occasionally.

OVEN: Line a cookie sheet with parchment paper. Preheat air fryer to 350F. Toss the tofu with the oil and taco seasoning. Bake 25 – 300 minutes, stirring occasionally.
