Description

Strawberry Cream Cheese Earthquake Cake is the ultimate easy dessert. It’s gooey, swirled with cream cheese, and packed with strawberry flavor.


Ingredients

  • 1 pkg. 2-layer-size strawberry cake mix
  • 3 large eggs
  • 1 cup water
  • 1/2 cup vegetable oil
  • 1 cup powdered sugar
  • 1 (8-oz). pkg. cream cheese, softened
  • 1/2 cup salted butter, melted (1 stick)
  • 1 tsp. vanilla
  • 1/8 tsp. salt
  • 1 1/4 cups strawberries, hulled and chopped
  • (optional) 3/4 cup white chocolate chips
  • Sweetened whipped cream (homemade sugar-free whipped cream)
  • Sliced strawberries

Instructions

  1. Preheat the oven to 350°F. Lightly coat a 13×9-inch baking pan with nonstick cooking spray.
  2. In a large bowl beat cake mix, eggs, water, and oil with an electric mixer on medium until combined. Pour batter into prepared pan.
  3. In a medium bowl beat powdered sugar, cream cheese, melted butter, vanilla, and salt with a mixer on medium until well combined.
  4. Drop spoonfuls of the cream cheese mixture over the cake batter. Using a knife, swirl the cream cheese mixture into the batter. Sprinkle with chopped strawberries and (optional) white chocolate chips.
  5. Bake 30 to 35 minutes or until the center is set. Serve with whipped cream and additional sliced strawberries.
