- 1/3 cup tahini
- 1/3 cup honey
- 1 teaspoon vanilla extract or vanilla paste
- 1/4 teaspoon salt
- 1 cup shredded unsweetened coconut
- 1/2 cup raw unsalted pumpkin seeds (pepitas)
- 1/2 cup raw unsalted sunflower seeds
- 1/4 cup chia seeds
- 1 cup sliced almonds
- 1/4 cup hemp hearts
- 1 teaspoon cinnamon
Instructions
- Preheat oven to 325 F. Line an 8″ square pan with parchment paper. Spray the parchment paper with cooking spray.
- Combine tahini and honey in a small saucepan over medium heat. Cook, stirring well, until combined and warmed (about 2 minutes). Remove from heat. Add vanilla and salt.
- In a large bowl, stir together coconut, pepitas, sunflower seeds, chia seeds and hemp hearts. Add the warmed tahini mixture and stir until evenly coated.
- Press the mixture into the prepared pan and bake for 30 – 35 minutes until golden.
- Using the parchment paper, remove from pan and let the mixture cool completely before cutting into squares.
