Looking for an easy Strawberry Cobbler you can make with fresh or frozen fruit? This simple, flexible recipe is lightly sweetened with monkfruit and inspired by Kathleen Ashmore of @katcancook. It delivers juicy, jammy fruit and a golden cobbler topping with minimal effort.

- 3 tablespoons butter
- 1 cup gluten-free or all purpose flour
- 1/4 cup oat flour
- 1/2 cup plus 2 tablespoons sugar or monkfruit substitute
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup unsweetened plain almond milk
- 1/2 teaspoon vanilla extract or vanilla paste
- 4 cups fruit (fresh or defrosted frozen), diced
- whipped cream or ice cream for serving
Instructions
- Preheat oven to 375F.
- Put butter in an 8″ baking dish and put the dish in the oven until the better is melted. Swirl the butter in the pan until the bottom is fully covered.
- In a medium bowl combine the all-purpose flour, oat flour, sugar or monkfruit, baking powder and salt. Whisk to combine.
- Add almond milk and vanilla and whisk again until smooth.
- Pour the batter into the prepared baking dish and do not stir. The butter will be separated but that is ok.
- Add the strawberries (or your chosen fruit) on top of the batter and sprinkle with the remaining 2 tablespoons of sugar.
- Bake for 45 – 50 minutes until the batter is set and golden on top. It may look a little wet but it will firm up as it cools.
- When ready to serve, top the cobbler with whipped cream or ice cream.
