- 1 pint heavy whipping cream
- 2 tablespoons monkfruit sweetener (or other sugar substitute)
- 1 teaspoon vanilla extract
Instructions
- Add whipping cream, monkfruit and vanilla to a bowl or immersion blender container.

Use the wire whisk attachment for a stand or hand mixer. Or use an immersion blender. Beat the ingredients together, starting on low speed and increasing to high slowly as it begins to firm up.

Beat for 60-90 seconds until stiff peaks form. Stopping once halfway through to scrape down the sides of the bowl.

- I prefer Lakanto monkfruit sweetener.
- Sugar-free whipped cream lasts for two days in the refrigerator if stored in an airtight container.
