Description
This Healthy Chicken and Broccoli Casserole is a high-protein symphony of vibrant vegetables, and nutrient-rich grains, proving that wholesome can indeed be delicious.
Ingredients
- 1 tablespoon olive oil
- 1/3 cup chopped onion
- 1 pound skinless, boneless chicken breast halves, cut into bite-size pieces
- 8 ounces mushrooms, sliced
- 3 tablespoon all-purpose flour
- 12-ounce can evaporated (regular or fat-free) milk
- 3 cups broccoli, fresh or thawed frozen, chopped
- 1 cup farro or brown rice, cooked according to package directions
- 16–ounces plain greek yogurt
- 1 tablespoon poultry seasoning OR 1 teaspoon dried rosemary
- salt and pepper
- 1/2 cup cheese, shredded

Preheat oven to 350ºF.

In a large skillet heat oil over medium heat. Add onion; cook 5 minutes or until tender, stirring occasionally. Add chicken and mushrooms; cook and stir 5 minutes. Season with salt and pepper.

Sprinkle the chicken and vegetable mixture with flour; stir and cook for an additional 2 minutes.

Add the evaporated milk. Cook and stir until thickened and bubbly. Stir in broccoli; cook and stir 3 minutes more.

Stir in the next six ingredients (farro/rice, yogurt, seasoning).

If your pan is oven safe, you can leave the mixture in the pan and put the pan in the oven. Otherwisse, transfer mixture to a 9″ x 13″ rectangular baking dish. Sprinkle with cheese. Bake 20 minutes and then broil for another 10 minutes until the casserole bubbly and the cheese topping is lightly browned and melted.
