This flavorful, protein-packed dish transforms a simple green salad into something you’ll actually look forward to eating. With flash-fried feta cubes coated in sesame seeds and panko breadcrumbs, every bite delivers a perfect contrast of crispy and creamy.

- One block of feta cheese (I prefer the kind that comes in brine)
- One egg, lightly beaten
- 1/4 cup all purpose flour
- 1/4 cup panko breadcrumbs
- 3 tablespoons sesame seeds
- olive or avocado oil
Instructions
- Heat a nonstick pan over medium heat and cover the bottom with olive or avocado oil.
- Mix panko and sesame seeds in a shallow bowl.
- Slice the feta into 1/2 inch blocks
- Dredge in the flour on both sides, dip into the beaten egg, and then dredge again in the panko/sesame seed mixture.
- Once the oil is hot enough that a pinch of breadcrumbs sizzle immediately when added, add the breaded feta. Cook 2 to 3 minutes per side until browned and heated through.
- Transfer to a paper towel lined plate and then add to the top of your salad.
