This super easy roasted cauliflower recipe combines two of today’s hottest superfoods: turmeric and cauliflower. And you can whip it up in 30 minutes on a sheet pan, making it an ideal recipe for a weeknight dinner. Turmeric roasted cauliflower has become one of my go-to recipes. One bite and you’ll understand why.

Benefits of Turmeric

A relative of ginger, turmeric is a vivid yellow-orange spice common in Indian, Southeast Asian, and Middle Eastern cooking. It’s also been used as medicine in places like India for centuries to treat issues such as breathing problems. Lately, turmeric has been touted as a super food that may fight cancer, ease depression, and more.

Benefits of Cauliflower

Cauliflower is having a moment right now. And with good reason.  It’s is an extremely healthy vegetable with a significant source of nutrients. Cauliflower also contains unique plant compounds that may reduce the risk of several diseases, including heart disease and cancer. Additionally, it’s weight- loss friendly, super versatile and can be used to replace grains and legumes in your diet.

Not only is eating cauliflower a fantastic way to increase your veggie intake, but it is also especially helpful for those who follow low-carb diets. This is because cauliflower is significantly lower in carbs than grains and legumes.

For example, a cup of cauliflower contains 5 grams of carbs. At the same time, a cup of rice contains 45 grams of carbs — nine times the amount of cauliflower (311).

Here are some examples of recipes that can be made with cauliflower instead of grains and legumes:

  • Cauliflower rice: Replace white or brown rice with cauliflower that has been grated and then cooked, as in this recipe.
  • Cauliflower pizza crust: By pulsing cauliflower in a food processor and then making it into a dough, such as in this recipe, you can make a delicious pizza. We buy cauliflower pizza crust at Trader Joes and it’s delicious.
  • Cauliflower mash: Instead of making mashed potatoes, steam and mash cauliflower with butter (or ghee).

Description

This super easy roasted cauliflower recipe combines two of today’s hottest superfoods: turmeric and cauliflower. Ingredients

Scale
  • One head of cauliflower, separated into florets (about 4 cups)
  • 3 tablespoons olive oil, melted ghee or grass-fed butter (I like Kalona)
  • 2 tablespoons nutritional yeast
  • juice of 1/2 lemon
  • 2 teaspoon turmeric
  • 1 teaspoon chili powder

Instructions

  1. Preheat oven to 425 F. Line a rimmed baking sheet with parchment paper.
  2. In a large bowl, toss the cauliflower florets with the oil (or substitute melted ghee or butter).
  3. Add the lemon juice, turmeric, chili powder, nutritional yeast, salt and pepper and stir until the mixture evenly coats the cauliflower.
  4. Spread the cauliflower in a single layer on the prepared baking sheet. Roast for 25 minutes until it is tender and slightly browned.

Notes

For Whole30 compliant or vegan version, use melted ghee or olive oil, rather than butter.
