Description

Looking for a quick, comforting dinner that satisfies your hunger without leaving a pile of dishes in its wake? Enter 30-Minute Chicken Minestrone: a hearty, flavorful soup that checks all the boxes. It’s a one-pot recipe, ready in just half an hour, and packed with wholesome ingredients to nourish your body and soul.


Ingredients

  • olive oil
  • 1 pound ground chicken or turkey
  • 1 large onion, chopped
  • 3 stalks of celery, chopped
  • 23 carrots, chopped
  • 3 cloves of garlic, minced
  • 2 tablespoons tomato paste
  • 1 can diced tomatoes
  • 1 can beans, drained
  • 1 tablespoon Italian seasoning
  • 4 cups chicken or vegetable stock (or chicken bone broth)
  • 10 ounce package of mini ravioli
  • Parmesan cheese and fresh parsley (optional garnish)

Instructions

  1. In a large stock pot or dutch oven, add a drizzle of olive oil and brown the ground chicken/turkey over medium heat until it is thoroughly cooked and no longer pink.
  2. Add chopped onions, carrots and celery and continue cooking for an additional 5 minutes.
  3. To the same pot, add garlic, tomato paste, diced tomatoes, beans, italian seasoning and stock/broth.
  4. Bring to a boil and then turn down to a simmer for at least 10 – 15 minutes.
  5. Prior to serving, return mixture to a low boil and add the mini ravioli. Cook according to package directions.
  6. Serve soup topped with shaved Parmesan cheese and chopped parsley.

Notes

  • Leftovers can be stored in the refrigerator for a few days (or frozen). You may need to add additional broth/water because the pasta will soak up the liquid.
