- olive oil
- 1 pound ground chicken or turkey
- 1 large onion, chopped
- 3 stalks of celery, chopped
- 2– 3 carrots, chopped
- 3 cloves of garlic, minced
- 2 tablespoons tomato paste
- 1 can diced tomatoes
- 1 can beans, drained
- 1 tablespoon Italian seasoning
- 4 cups chicken or vegetable stock (or chicken bone broth)
- 10 ounce package of mini ravioli
- Parmesan cheese and fresh parsley (optional garnish)
Instructions
- In a large stock pot or dutch oven, add a drizzle of olive oil and brown the ground chicken/turkey over medium heat until it is thoroughly cooked and no longer pink.
- Add chopped onions, carrots and celery and continue cooking for an additional 5 minutes.
- To the same pot, add garlic, tomato paste, diced tomatoes, beans, italian seasoning and stock/broth.
- Bring to a boil and then turn down to a simmer for at least 10 – 15 minutes.
- Prior to serving, return mixture to a low boil and add the mini ravioli. Cook according to package directions.
- Serve soup topped with shaved Parmesan cheese and chopped parsley.
Notes
- Leftovers can be stored in the refrigerator for a few days (or frozen). You may need to add additional broth/water because the pasta will soak up the liquid.
